It is easily adaptable to suit any winemaker's style, whether it be tons of fresh toasty oak, or fermented in stainless steel; picked a little early to keep it light and crisp, or picked a little later so the wine is loaded with rich fruit and golden in color. Tuscany

|
Tuscany is home to perhaps the best known of all Italian wines; Chianti. Prior to the mid 1990's, all Chianti producers were required to blend 10% to 30% of local white grape varietals with their Sangiovese grapes. That law has now changed and producers can now add a small percentage of non-traditional grapes such as Cabernet Sauvignon and Merlot into their wines, making today's Chianti more well balanced and food friendly than ever.

Tuscany makes other wonderful wines as well, and historically Brunello di Montalcino is the most sought after of all Tuscan wines made from Sangiovese grapes. In 1888, Ferruccio Biondi-Santi succesfully isolated a superior clone of Sangiovese called "Sangiovese Grosso," or the "Brunello" clone. This clone is perfectly suited to thrive in the terraced hillside vineyards of Montalcino, and after a minimum of four years of aging, the proof is in the bottle. Vino Nobile di Montepulciano is another wonderful wine made primarily of Sangiovese (but again made with its own clone called "Prugnolo"). Produced only in the little township of Montepulciano, Vino Nobiles are generally a little fuller bodied than Chiantis, yet softer in tannins than their big brother Brunello.

Super Tuscan

The strict laws that govern winemaking (DOC and DOCG) in the most esteemed regions of Tuscany gave birth to what the world knows as "Super Tuscans." They are some of the most highly prized (and priced!) wines on the planet. A Super Tuscan is simply a wine made in Tuscany that does not follow local laws and guidelines. A Super Tuscan (or IGT red wine) can use any red varietal; Sangiovese is common but not standard and Bordeaux and Rhone varietals are common as well. For a Super Tuscan, quality is the only tradition.

Veneto is Italy's largest wine producing region. The most famous wines of the region are from a zone northwest of Verona called Valpolicella. We feature three different types of wine from Veneto. Each year the region's grapes (Corvina, Molinara, and Rondinella) are picked and separated, and the very best of each cluster are set aside to dry for a few months on straw mats. While that small percentage of grapes is drying, the rest are made into Valpolicella Classico, an easy drinking everyday wine. When the dried grapes are ready, they are pressed off and made into one of the world's most intriguing wines-Amarone della Valpolicella. Intense color, flavor, and beautiful roundness of tannins are just the beginning of what makes Amarone a wine of such significance. The third wine is called Ripasso della Valpolicella, and is made by pouring a portion of the Valpolicella Classico over the pumice of the freshly pressed Amarone, boosting the strength, body, flavor, and durability of standard Valpolicella (it's also known as "Baby Amarone").

Piemonte

Located in the foothills of the Alps, Piemonte is responsible for producing some of Italy's finest wines, particularly Nebbiolo and Barbera. Nebbiolo is considered Italy's most noble grape and the two townships of Barolo and Barbaresco are world renowned for the wines they produce with it. These wines are not for the faint of heart, they have huge tannins, earth tones, and aromas of dried flowers, red fruits and spice. They age for decades and are meant to be enjoyed with food. Barbera may play second fiddle to Nebbiolo, but the wines made from it are stellar. Barbera especially has the up-front fruit that most of us here in California are used to, yet there is a perfect blend of acidity which lends itself to pairing well with almost any meal

Zinfandel came across the U.S. (via New York from Central Europe) and rooted itself here in California during the California Gold Rush of the mid 1800's. Whereas all other grape varieties grown in California are grown and vinified well in other areas of the world, the same cannot be said about Zinfandel. It is the only mainstream variety that California can say we make better than anyone else on the planet. And what's even better is that Paso Robles is arguably the finest Zinfandel region in California!

Cabernet Sauvignon is one of the most planted dark-skinned grape varieties in the world. Historically, some of the most collected and prized wines in the world are the Cabernet based blends of Bordeaux. But it's not just to the left and right banks of the Gironde River in France that one finds the pinnacle of Cabernet's expression. It turns out that California Cabernet Sauvignon, with Napa Valley setting the pace, is considered every bit as priceless as those from the majestic vineyards of France.

If there is one grape variety that has the biggest fan club, it would be Pinot Noir. Pinot is elegant and sophisticated. It is very hard to grow and even harder to vinify. It too (like its Burgundian cousin Chardonnay) can be made in a few different styles. Some Pinot Noirs are now extracted for longer periods of time for added color and concentration, yet many winemakers handle their grapes with just enough deft touch to let the subtle nature of this variety speak for itself.

According to wine critics, some of the best Syrahs in the world are now made here on the Central Coast. This section is for wines that are either blends or are the lone varietal on our list. Meritage wines are blends of Bordeaux varieties such as Cabernet Sauvignon, Merlot, Cabernet Franc, Malbec and Petit Verdot. California Rhone blends use grapes like Syrah, Grenache, Mourvedre, and Cinsault. There are no laws governing the blending ratios. We have selected each of these wines because we think they go very well with our menu and we like the wide spectrum they offer.
